Equipment

  • Metal skewers

Ingredients
  

  • 10-15 jumbo shrimp deveined and easy-peel
  • 1/2 cup unsalted butter
  • 1 tbsp cayenne pepper
  • 1 tbsp black pepper
  • 1 tbsp coriander
  • 1 tbsp mustard
  • 1/2 tsp salt
  • 1/4 cup lemon juice
  • 1/4 cup lime juice

Smoky Tomato Butter:

  • 1/2 cup unsalted butter
  • 2 tbsp tomato sauce
  • 2 tbsp chopped cherry peppers
  • 1/2 tsp salt

Instructions
 

  • Rinse shrimp in cold running water and pat dry with paper towels.
  • In a medium bowl, mix together butter, cayenne pepper, black pepper, coriander, mustard, salt, lemon juice, and lime juice.
  • Skewer the shrimp and brush the butter mixture onto both sides of each shrimp.
  • Preheat the grill or grill pan to medium-high heat.
  • Grill the shrimp for 3-4 minutes on each side, or until cooked through and slightly charred.
  • In a food processor, blend together butter, tomato sauce, cherry peppers, and salt to create the smoky tomato butter.
  • Serve the grilled shrimp with a side of smoky tomato butter for dipping.

Notes

For best results, use jumbo or tiger shrimp and make sure to use the same size throughout the dish.
If you don't have access to an outdoor grill, you can use an indoor grill pan.
To prevent the shrimp from sticking to the grill, brush the grill grates with cooking oil before grilling.
The smoky tomato butter can be made ahead of time and stored in the refrigerator.
