Equipment

  • Smoker or grill
  • Wood chips (Alder or Pecan are recommended)
  • Baking sheet

Ingredients
  

  • 4-5 lbs Walleye fillet skin removed
  • 1 cup Kosher salt
  • 1 cup brown sugar
  • 2-3 cloves garlic minced
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 2 tbsp fresh dill chopped
  • Lemon wedges for serving

Instructions
 

  • In a large bowl, mix together the Kosher salt, brown sugar, granulated garlic, onion powder, black pepper, and fresh dill.
  • Rub the mixture all over the Walleye fillets, making sure to coat them evenly.
  • Cover the fish with plastic wrap and refrigerate for 8-10 hours.
  • Preheat the smoker or grill to medium-high heat.
  • Place the Walleye fillets on a greased baking sheet and smoke or grill for 10-15 minutes, or until the internal temperature of the fish reaches 145°F.
  • Serve hot with lemon wedges.

Notes

  • Be sure to remove any pin bones or rib bones from the fish before smoking.
  • If using a grill, place the fish on the grill grates and grill on indirect heat for a smokier flavor.
  • The smoking time may vary depending on the size of the fish fillets.
  • If you want a creamier sauce to go with your fish, you can try making a Lemon Cream Sauce by combining lemon juice and sour cream in a bowl.
  • Add salt and pepper to taste.
