  • Meat thermometer
  • Paper towel

Ingredients
  

  • 2-3 lbs of cod fillets skin-on
  • Coarse sea salt
  • Brown sugar
  • Black pepper
  • Garlic powder
  • Onion powder
  • Soy sauce
  • Rice wine vinegar
  • Lemon juice
  • Chili garlic sauce
  • Fresh ginger
  • Olive oil
  • Soaked wood chips hickory, mesquite, or applewood

Instructions
 

  • Rinse cod fillets under cold water and pat dry with paper towel.
  • Generously coat fillets with a mixture of coarse sea salt, brown sugar, black pepper, garlic powder, and onion powder. Let it sit for 30 minutes.
  • Mix together soy sauce, rice wine vinegar, lemon juice, chili garlic sauce, fresh ginger, and olive oil in a small bowl.
  • Preheat pellet smoker or grill to 225°F and add soaked wood chips.
  • Place cod fillets on wire rack and put on grill grates.
  • Smoke for 2-3 hours until internal temperature reaches 145°F.
  • Remove from grill and let rest for a few minutes before serving.

Notes

  • Use black cod for a richer flavor.
  • Wrap the fillets in plastic wrap to help retain moisture and flavor.
  • Experiment with different wood chips for unique flavor combinations.
