Ingredients
  

  • 1 pound beef steak skirt, flank, or top sirloin
  • 2 tbsp olive oil
  • 1 large onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1/2 cup tomato sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Season the meat with a mixture of salt, black pepper, and dried oregano, and let it sit at room temperature for 30 minutes.
  • Heat the olive oil in a Dutch oven or a heavy-bottomed pot over medium-high heat.
  • Sear the steak on both sides until browned, then remove it from the pot and set it aside.
  • Saute the onions and peppers until they're soft and translucent.
  • Add tomato sauce, low-sodium soy sauce, apple cider vinegar, and sugar to the onions and peppers. Stir until well combined.
  • Return the meat to the pot and let everything cook together until the steak is tender.
  • Serve the steak with the flavorful sauce on top and garnish with sauteed red onions, green peppers, or white onions.

Notes

  • Make sure to slice the steak against the grain to create a tender meat.
  • You can adjust the spice level by adding or reducing the amount of oregano and black pepper.
  • The dish is perfect when served with white rice and sweet plantains.
