Smoked Bacon Jerky

Equipment

  • Oven or pellet grill
  • Baking sheet or wire rack
  • Cooling rack
  • Basting brush
  • Wood chips (hickory wood recommended)
  • Paper towels

Ingredients
  

  • 1 lb thick-cut bacon
  • 2 tbsp maple syrup
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tbsp dark brown sugar optional
  • 1 tsp sriracha sauce optional for sriracha bacon jerky

Instructions
 

  • Preheat oven to 200°F or set up your pellet grill to a low temperature.
  • In a small bowl, mix together maple syrup, black pepper, garlic powder, sea salt, and dark brown sugar (if using).
  • Lay bacon strips out on a baking sheet or wire rack, and brush the marinade ingredients onto the bacon slices.
  • Place a cooling rack on top of the baking sheet and place the bacon strips on top of the cooling rack.
  • Place the baking sheet with the bacon strips on top in the preheated oven or on your pellet grill.
  • Smoke the bacon for 3-4 hours in your home oven or 4-6 hours on your pellet grill.
  • Remove the bacon from the oven or grill, and let it cool to room temperature on paper towels to soak up any remaining grease.

Notes

  • For best results, use wood chips that are appropriate for smoking, hickory wood is recommended.
  • To make sure that your bacon strips dry evenly, make sure to place them in the right place in your oven or pellet grill.
  • To avoid any issues with excess grease, be sure to use a baking rack or cooling rack to elevate the bacon strips while they smoke.
  • Once cooled, store in an airtight container or ziplock bag. It should last for several weeks in the pantry or several months in the freezer.
  • Feel free to customize the recipe to your own taste by adding different flavors to the marinade or using different cuts of bacon.
