Ingredients
  

  • 10 fresh habanero peppers
  • 2 cups of fruitwood chips craboo, grapefruit, or orange wood
  • 1 cup natural vinegar apple cider or white vinegar
  • 1 large white onion chopped
  • 3 cloves of garlic minced (roasted, optional)
  • 2 tablespoons key lime juice or lemon juice
  • 1 tablespoon organic sugar or brown sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Liquid smoke optional

Instructions
 

  • Smoke the habanero peppers using fruitwood chips at a low temperature (around 225°F) for 2-3 hours.
  • In a saucepan, combine smoked peppers, vinegar, onion, garlic, lime juice, sugar, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat to low and simmer for 10-15 minutes.
  • Allow the sauce to cool slightly before transferring to a blender or food processor.
  • Blend the sauce until smooth, venting the blender to allow steam to escape.
  • Strain the sauce through a fine-mesh strainer to remove any remaining solids or residues.
  • Transfer the strained sauce to clean jars or hot sauce bottles and refrigerate.

Notes

Customize the sauce's heat by using more or fewer peppers or incorporating different types of chili peppers.
Experiment with various fruitwoods or liquid smoke to find your favorite smoky flavor.
Adjust the seasoning to your preference by adding extra salt, sugar, or vinegar to taste.
Keep the sauce refrigerated for up to a month to maintain its freshness and flavor.
